Celery apple foam soup

Ingredients for 4 people:

  • 75 g butter
  • 250 g celery, peeled and cut into cubes
  • 4 apples (Topaz or Granny Smith), cut into cubes
  • 250 ml Obers
  • 500 ml vegetable soup
  • Pinch of sugar
  • Salt, pepper
  • Parsley for garnish

Preparation in approx. 35 min.

Heat the butter in a frying pan, fry the celery and apples, pour in the top and vegetable soup and simmer for about 20 minutes.

Puree the soup in a blender and seam through a skewered sieve. Season with salt, pepper and a little sugar.

Before preparing, froth the soup again with the blender and garnish with parsley.
