Marillenknödel

in glass

Ingredients for 6 people:

Marillenröster:

  • 6 Apricots
  • 6 tbsp sugar
  • 1 vanilla pod, slit
  • 2 – 3 tbsp orange juice or apricot brandy

 

Breadcrumbs:

  • 50 g butter
  • 50 g breadcrumbs
  • 100 g almonds, grated
  • 50 g sugar

 

Cream:

  • 250 g pots
  • 250 g mascarpone
  • 1 tbsp honey

 

Quarter and core the apricots. Caramelize the sugar in a pan, then add the apricots and vanilla and fry around. Drain with the juice or brandy and simmer until the caramel is dissolved.

 

For the breadcrumbs, fry the butter in a larger pan until everything has a nice, golden brown colour and smells good. Allow to cool.

 

Mix all the ingredients of the cream well.

 

For dressing all components in glass layers:

 

first 1-2 tbsp breadcrumbs, then the pot cream, then the apricots, another layer of pots and finally a layer of breadcrumbs. Serve in a glass.

 

Tip:

The fruit can be varied according to season and mood, e.g. with earthberries or plums.
